A Junior Sous Chef for Conrad Dubai will work closely with theSous Chef to manage all aspects of the kitchen to deliver an excellent Guest and Member experience while managing food provisions, assisting with guest queries, and controlling costs. What will I be doing? * Assist in managingall aspects of the kitchen including operational, quality and administrative functions * Assist in managing the provision of food to the outletand taking action where necessary to ensure compliance with current legislation * Assist in positive outcomes from guest queries in a timely and efficient manner * Ensure food items are of a good quality and stored correctly * Contribute to menu creation by responding and incorporating Guest feedback * Ensure the consistent production of high quality food through all hotel food outlets * Assist in managing customer relations when necessary
* Managing day to day breakfast operation and ensuring standards are being applied within the operation. * Developing junior chefs, sharing knowledge to build diverse team, ensuring team equally empowered to deliver the best breakfast experience. * Must have knowledge of food cost, inventory control, ordering process through the system ( FMC, FBM). * Must have knowledge of ISO 22000, HACCP, PIC in order to be in line with DM and food safety requirements. * Must have experience in large scale all day dining, specially breakfast. * Coming up with new ideas, developing recipes and producing dishes to our clients which appeal and represent Rixos luxury life style concept. * Work with superiors to produce diversified menus on accordance with the Rixos Premium JRBs policy and vision. * Experience in all day dining * Experience in luxury hospitality industry
Under the general guidance of Executive Chef or delegate carries out all requests to ensure the smooth running of the kitchen operation to the required standards and achieve maximum productivity. * Ensure required mis-en-place is complete prior to the outlets opening hours. * Food service and presentation must adhere to all preset standards. * Ensure all orders are placed at the required time. * Ensure all stocks are adequate for the needs of the business at times. * Check the physical conditions of equipment, ensuring adequate operating stock level are maintained. Report any maintenance request to the Sous Chef. * Monitoring all the Chiller / Freezer Temperature to avoid spoilage of food. * Keeps updated with new products in the market. * To ensure self and all Kitchen department colleagues actively participate in all EHSMS requirements.
