The Brasserie is an 80-seat fine dining restaurant with a fantastic reputation for its farm-to-table cuisine. The owners take sustainability seriously and the restaurant has its own organic garden, fishing boats, chicken coop, apiary and coconut plantation. The successful candidate will report to the Restaurant Manager and mix strong customer service and management skills with a comprehensive library of drink recipes. A minimum two-year commitment is required. Develop an innovative, seasonal cocktail menu, emphasizing local and garden ingredients.
