* Create new pastry and dessert menus, conduct tastings and presentations. * Prepare and implement menus and specialty dishes, provide permanent control of food technology, preparation, quality, hygiene, sanitation and decoration. * Oversee all matters related to food purchasing for pastry. * Check food preparation, individual costs, quality, quantity inventories and portion control on a daily basis. * Work with Executive Chef and Managers of People Services to ensure the departmental performance of staff is productive and assist in planning for future staffing needs. * Coach, counsel and discipline staff, providing constructive feedback to enhance performance. * Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures.
