The Restaurant

The restaurant is part of a well-known company in Australia that focuses on providing innovative experiences to its customers. It is well known for the unique atmosphere each venue provides and its memorable food. The restaurant draws on the purity and integrity of the Japanese Cuisine while infusing it with an Australian sensibility. You can discover dishes both familiar and unknown, all designed to highlight the freshest local produce.

Most recently, nominated as Japanese Restaurant of the Year 2022, the venue is a well-known destination in Melbourne. Positioned in the heart of the city, the restaurant offers a variety of fresh local seafood along with the largest selection of the world’s purest expression of Chardonnay. An exciting feature of the restaurant is the separate space allocated for private dining and events where chefs can truly entertain and show their skills.

The Role

  • Will be reporting to the Executive chef
  • General sushi making and cooking duties 
  • Ensure and maintain readiness of work station for service by being fully equipped and stocked
  • Maintain working order of equipment and workspace at all times 
  • Ensure correct preparation for service – mis en place 
  • Complete set up, changeover, closedown and handover to standard 
  • Use correct techniques and follow procedures and recipes when preparing and cooking menu items 
  • Follow proper plate presentation for all dishes 
  • Correctly date and store food, sanitize equipment and take other measures to ensure integrity and quality of food product 
  • Perform tasks in accordance with food safety procedures 
  • Follow all OH&S procedures, including reporting and hazards/incidents to management 
  • Take reasonable care for own and others health and safety 
  • Endeavour to minimize wastage and breakage 
  • Assume 100% responsibility for quality of products served 
  • Take accountability for own actions 
  • Maintain a ‘clean as you go’ standard Work with initiative to seek and offer assistance as necessary 
  • Proactively carry out duties as instructed by management 
  • Demonstrate an enjoyment and enthusiasm for work by adopting a ‘can do’ approach to tasks

The Requirements

  • Highly skilled sushi chefsMinimum 4 years' experienceMust have experience from premium high volume Japanese restaurantsAble to work under pressure
  • Excellent standards of personal hygiene
  • Strong Knife skills
  • Maintain a clean and professional appearance at all times
  • Proven guest orientation / possess “guest first” mentality. Attentiveness to guests’ needs.
  • Product knowledge / understanding of the company’s Restaurants names their locations, and cuisines. Act as an ambassador for all venues at all times by demonstrating passion and pride for the brand
  • Good level of English to be able to communicate without hesitation with staff and customers alike. Able to work in a team
  • Ability to relocate in 3 months

What is Offered

  • Salary 75-85,000 Australian dollars gross (super/pension comes on top of this amount)
  • 5 days/week, working hours around 38-40 hours a week
