Job Overview

As the Sushi Chef, you will need to support and assist the overall operation of the sushi section and by using the right ingredients, design a successful menu and present sushi dishes in interesting and appealing ways at all times.

You will be responsible for preparing different types of sushi as per Amazonico Menu standards.

You will also manage the ingredients handling and preparation and maintain a deep understanding of which ingredients taste well together.

To make sure on providing a rich and distinct Japanese/Asia dining experience to attract more customers and increase sales.

Amazonico Responsibilities

·Ensures assist on day-to-day operations of sushi section

·Ensures adherence to highest quality food preparation and hygiene standards

·Making sure to do food preparation is in accordance with regulatory guidelines

·Ensure to comply on correct temperature of food served is according to the HACCP guidelines

·Ensure compliance with food hygiene and Health and Safety standards

·Coordinate with Sushi Master on all special requests and food allergies mentioned by waiters

·Make sure to use high-quality and fresh ingredients like vegetables and fishes required for every preparation

·You should be able to carefully slice and roll the sushi to make it visually appealing as per Amazonico standards

·Inform your Sushi Master on any special requests and plate the dish as per the guests’ requirements if any

Departmental Responsibilities

·Assist the Sushi master to monitor and make sure that proper inventory for sushi section is given high importance and priority in order to achieve budgeted food cost

·Help to inspect the quality and concise portions of the food made before serving

·Ensure to adhere on strict compliance with food handling and sanitation standards

·Follow proper food preparation protocols as mandated by section head

·Ensures compliance with all applicable laws and regulations

·Ensure that the cleanliness of all sushi section in all work areas are in priority

Role Responsibilities

·Follows and enforces all applicable safety procedures specified by the Sushi Master

·Make sure to be aware of your duties and responsibilities duties and expected from you

·Ensuring correct stock rotation procedures are followed at all times

·Prepare and do all the mise en place for sushi section and sure that all ingredients are freshly available to avoid unavailability

·Ensure that all sushi storages for all fruits, vegetables, and meat such as crab, eel, salmon, and tuna are freshly prepared

·Make sure to be aware on how to operate and maintain sushi section’s equipment and reports malfunctions accordingly

·Assist on monitoring the stock levels of all sushi kitchen supplies and coordinate with Sushi Master

·Assist the Sushi Master on forecasting all necessary supply needs and estimate costs of sushi section

·Responsible for ordering food materials and supplies in order to feed the projected amount of guests per day


·To always act and perform accordingly to Amazonico standards and protocols

·Follows proper handling and right temperature of all food products in sushi section

·Ensures all equipment pastry equipment is properly maintained and in working order in accordance with the municipality standards and procedures

·Ensure all sushi products are prepared in a consistent manner and meet departmental standards

·Assist the Sushi Master to review the ordering and control of stock levels for sushi section

·Check quality of material and condition of equipment and devices used for cooking

·Ensures proper receiving, storage (including temperature setting) and rotations of food products so as to comply with the health and safety regulations at all times

·Stores foods in designated areas and maintain high level of freshness to avoid any food wastages

·Preparing all sushi dishes as per the established guidelines and food safety standards

People Management

·Trains and supervises associates in the proper preparation of sushi menu items and operation of equipment

·Teach new joiners at sushi section with correct ways that they require to perform their roles to the required standards and protocols of Amazonico

·Supervises and assists in preparation and presentation of all food items


·Attends all scheduled briefings with the section head

·Ensure to delegate information to all sushi subordinates for compliance with food hygiene and Health and Safety standards


·You will need to display exceptional camaraderie with other team members or subordinates by providing a positive enthusiasm and passion on the craft

·Work closely with the Sushi Master on providing training with new joiners

·Coordinating with other team members for fulfilling special requests
