Executive Sous Chef

Executive Sous Chef for multiple Restaurants & Bars - Private Island in the Caribbean – 2 year contract – Single status


Reporting to Head Chef

·This is a rare opportunity for an individual who is excited by challenge

·An exclusive boutique hotel in the Caribbean is looking for the perfect Sous Chef candidate to assist in managing the kitchens and food preparations

·This is not an average position, it is an extremely demanding, but incredibly rewarding role that does not come along every day

·The hotel has to be both a wonderful experience for the hotel guests as well as a “Club House feel” for the rest of the island residents


Specific areas of responsibilities:

·Deputize the Head Chef in his/her absence

·The Sous Chef will be responsible in assisting the day to day operation of three kitchens

·Team management: Focus on developing consistency of the food delivery and expanding the team skills and knowledge by coaching and mentoring

·Maintaining highest kitchen and food preparation standards

·Compliance with all policies and procedures as set out by the company

·Maintaining guests and team satisfaction whilst driving profitability and innovation

·Assist in creating menus and recipes with different identities for both restaurants as well as picnics and events

·Shared responsibility for appropriate stock levels and month end inventory

·Ensure that all kitchen equipment and environment are hygienic and working properly

·The Sous Chef will assist in looking after up to 25 kitchen staff. This is a hands on role that requires cooking and involvement in the day to day operation

·Enjoys participating in, creating, and running events


Background & skills:

·Proven track record of last employments

·Knowledge of international cuisines

·Experience in a similar role is an advantage

·Excellent knowledge of all sections

·International working experience is an advantage

·Up to date with food and beverages international trends and best practices

·Ability to understand and meet financial targets

·Conflict resolution - flexibility & adaptability

·Ability to spot and resolve problems efficiently

·Attention to detail

·Inventory management

·Ability to work under pressure
