We are currently looking for a Sous Chef

We are looking for a professional Sous Chef to be the second in command in our kitchen, following Executive Chef’s specifications and guidelines. The successful candidate will employ its culinary and managerial skills to play a critical role in maintaining and enhancing our customers’ satisfaction.

  • Sous Chef influences the skills, knowledge, attitude, communication, and team spirit of every kitchen employee
  • Helping in the preparation and design of all food and drinks menus
  • Ensuring that the kitchen operates in a timely way that meets Dukes The Palm quality standards
  • Responsibilities for all stations of kitchen ensuring standards are kept
  • Order supplies to stock inventory appropriately
  • Have good fundamental cookery skills which cover Cold Kitchen, Hot Kitchen and the ability to work in fast paced service environment
  • Have a grasp of food costing and the impact of preparation, wastage, and over/under ordering
  • Liaise with other Sous Chefs, Chef de Cuisines & Junior Sous Chefs regarding items or staff needed from other departments
  • Supervise and carry out the production of all dishes according to the prescribed recipe and specifications and ensure that the taste, portion size, quality and presentation of the dishes conform to Dukes the Palm standard
  • Control the food cost, portions and market lists with all cost process kept up to date with the Executive Chef and procurement
  • Maintain a positive and professional approach with coworkers and guest


  • Previous experience in a large hotel with at least 500 keys in a luxury property required
  • Pre-opening experience is an advantage 


  • Proven work experience as a Sous Chef
  • Active listening and effective communication skills
  • Flexibility to work in shifts
  • Strong organizational and multitasking skills, with the ability to perform well in a fast-paced environment
