Pastry Cook

The award-winning Brasserie Restaurant on Grand Cayman in the Caribbean is currently accepting applications for the position of Pastry Cook. The Brasserie is an 80-seat fine dining restaurant with a fantastic reputation for its farm-to-table cuisine. Adjoining the restaurant is an upscale bistro-style market and coffee shop, an outdoor juice bar, and a quick, casual open air BBQ joint. The owners take sustainability seriously and the restaurant has its own organic garden, fishing boats, chicken coop and apiary. 

Responsibilities include, but are not limited to:

• Prepares high-end desserts and homemade breads and pastries including muffins, scones, cupcakes, cookies, breakfast breads and more.
• Prepares all menu items following recipes and yield guides, according to company standards.
• Follows pastry chef’s instructions and directions.
• Maintains and strictly abides by Cayman Islands sanitation, health, and safety laws.
• Maintains the cleanliness and good working conditions of all tools, equipment and supplies properly and safely 
• Maintains a clean and safe workstation at all times.

The successful candidate will:

• Be a culinary graduate or have professional training.
• Have a minimum 3 years’ work experience in a high-volume restaurant.
• Have previous fine dining pastry experience.
• Have ability to plan and prepare for the different restaurants, catering, and special events.
• Be well organized and able to effectively manage their workspace.
• Have excellent time management skills and the ability to prioritize tasks.
• Be energetic, enthusiastic, and able to work under pressure.
• Respect the head chef/pastry chef and want to learn.
• Be able to adjust to new cultures and environments.
• Be able to work cohesively with multicultural coworkers.
• Enjoy weekends off.
