Executive Sous Chef, Production Kitchen

JOB SUMMARY: Supervises culinary personnel, as well as preparation and production of food in a specific area of the Food Service Department.

MAJOR RESPONSIBILITIES:

• Responsible for food presentation, quality of product and waste prevention by conducting quality inspections and touring each work unit on a daily basis.
• Maintains food cost and culinary labor cost as predetermined by Revenue/Operations department.
• Oversees daily practices of cleanliness and safe food practices. Works closely with Unit Management and Lead Cooks on upholding standards of HACCP program.
• Develops menus for holidays, special events and restaurants. Assists with park exclusives and plated meals in full service restaurants. Coordinates catering functions with the banquet chef.
• Understand and actively participate in Environmental, Health & Safety responsibilities by following established UO policy, procedures, training and team member involvement activities.
• Performs other duties as assigned.

EDUCATION:

• Associate's degree (AA)
• or equivalent from a two-year college or technical school.

EXPERIENCE:

• 5-7 years Culinary experience in a high volume environment with 3-5 years supervisory role required;
• or equivalent combination of education and experience.

CERTIFICATIONS, LICENSES, REGISTRATIONS:

• Professional Food Manager Certification required.
• Chef apprentice preferred.
