Job Scope

Under the over-all guidance of the General Manager, oversees and directs all aspects of F&B operations. Responsible for the management of all aspects and functions of the food and beverage operation in accordance with resort standards. Implements and maintains a service and management philosophy, which serves as a guide to the respective team members. Provides support, training, direction, focus, helps team members have continuous success. Develop understanding of food and beverage service processes.

Areas of Responsibility:

  • Ensure that the Food and Beverage operation runs smoothly and effectively in compliance with resort operational standards.
  • Consistently offer professional, friendly and engaging service.
  • Lead and manage the day to day operations of the Food & Beverage Department, ensuring all service standards are followed.
  • Drive innovative promotions, menus and concepts; creating a destination of choice for both hotel and external guests.
  • Lead and support all Food & Beverage departments in the achievement of their financial and operational targets.
  • Prepare annual budgets and administer in a fiscally responsible manner.
  • Implement effective control of food, beverage, manning and operating expenses throughout the F&B department.
  • Assist in the preparation of the annual strategic plan and achieve the goals and targets.
  • Ensure the implementation of standards in guest service and constantly seek out ways to improve product and service as well as increase profits.
  • Oversee the selection, training and development of all team members to ensure timely recruitment and career growth.
  • Follow over all resort policies, department policies, procedures and service standards.

Experience and skills include:

  • Previous Food & Beverage experience in the same role with progressive leadership experience of at least 5 years in luxury hotel food & beverage operations.
  • Computer literate in Microsoft Window applications required.
  • A university / college degree in a related discipline is required.
  • Strong interpersonal and problem solving abilities.
  • Highly responsible & reliable.
  • Ability to work well under pressure in a fast-paced environment
  • Ability to focus attention on guest needs, remain calm and courteous at all times
  • Good knowledge of international cuisine and dining trends.
