The Heart of Europe – Côte d’Azur Monaco

Inspired by the vibrant playground of the rich and famous in the South of France, the Côte d’Azur resort transports our guests to the French Riviera. The lavish five-star, adults-only luxury beach resort is located within The Heart of Europe on “The World”, a group of islands just seven kilometres off the coast of Dubai. Côte d’Azur comprises four five-star hotels named after picturesque coastal hotspots along the famous French Riviera: Monaco, Nice, Cannes and St. Tropez.


About the job

For the opening of our hotel, the Côte d’Azur Monaco, we are looking for an experienced cost controller. This position is responsible for planning, organising and managing all costs of the hotel, controlling the F&B cost function and maintaining a high standard in all related areas.


As our Cost Controller, you will:

  • Provide analysis of consumption in the F&B outlets in order to process food and beverage orders as accurately as possible
  • Analyse all food and beverage costs on a monthly basis and make recommendations for cost saving alternatives
  • Maintain daily updated food and beverage costs
  • Establish and maintain a food and beverage inventory database, including up-to-date prices
  • Coordinate, attend and monitor all physical inventories of food and beverages to ensure their accuracy
  • Ensure proper storage and distribution of all food and beverage items
  • Establish and maintain a cost allocation transfer system for food and beverage supplies to the various departments
  • Assist management in the calculation of menus to determine selling prices for each menu item
  • Approve all stock orders
  • Account and monitor all stock transfers between hotels


Our preferred talent has:

  • A diploma/degree in finance
  • At least 2 years’ experience in a similar position at a luxury hotel – preferably a resort hotel
  • Excellent communication and interpersonal skills
  • Strong organisational and planning skills
  • A highly accurate and detail-oriented working method
  • A pleasant personality
  • A well-groomed appearance
