About Taj Exotica Resort and Spa, The Palm, Dubai

Continuing this legacy in providing guests with the highest levels of personalized, intuitive service and careful attention to detail, IHCL will be introducing its newest addition - Taj Exotica Resort & Spa, The Palm Dubai. Situated on the East Crescent of the Palm and connected to a private beach, the hotel will feature 258 rooms, 67 suites, six F&B venues, a kids’ club, sprawling banquet & meeting spaces and Taj’s signature Jiva Spa.  Job Responsibilities

  • Supervise the associates of the allocated section/cuisine in the kitchen by ensuring adherence to grooming standards, checking the mise en place, maintaining HACCP standards, dispensing orders on time and oversee food preparation and presentation according to standard recipes. 

  • Ensure consistency in portion size, taste, texture and temperature of food.

  • Monitor the quantity of mise en place for smooth operations with minimum wastage and spoilage of ingredients.

  • Notify the Sous chef of all stocks of cooked and uncooked food in the chiller and freezer to ensure the excess is reduced by preparing it as daily specials or for a buffet if any and ordering ingredients for increasing the stock of items that are less in stock to avoid non availability of items.

  • Prepare and check the ordering list on time for the Sous chef to place orders for all the ingredients required in the kitchen.

  • Work closely with the Sous chef in preparing new dishes, presentations and food displays.

  • To inform Food & Beverage service staff of menu specials and out of stock menu items in absence of the Sous chef

  • Strictly monitorthe following HACCP standards

  • Experience in European cuisine is an advantage.

Your experience:

  • 04 years of experience in the department with 2years as DCDP.

  • Should have supreme culinary skills, basic knowledge of pricing; competitor knowledge; international cuisine trends and food safety norms.

  • Customer orientation, planning & organizing, People Management, Creativity & Adaptability.
