Reports his day to day routine activities to the Head of F&B and a discuss the previous day’s activities as well as future events and promotions. Assists in monitoring activities of the competitors, identify market trends and ensure that the Outlet Managers are aware of them. To ensure proper control on payroll procedures and time cards including management authorization on overtime. Actively seeks and reviews customer and guest feedback with regards to food and beverage quality, service, curtesy of staff and overall satisfaction and takes appropriate and timely action. Assists in creating business plan for the department. Responsible for the upkeep of all F&B related areas of operation. Assists in developing yearly training calendar for the department. Responsible to ensure all staff are meeting all established standards of service (SOP). Test service skills of staff and reinforce all standards on food quality and service details. Maintains at all times the AFOC image through high professional and personal standards. Promotes high employee morale and Team work at all times. Maintains effective training practices within the F & B Department and participate in On-Property Training programs. Assists in recruiting and interviewing new employees. Assist line manager in creating and developing annual department objectives, goals and budgets. Attends individual monthly Outlets communication meeting to ensure staff is correctly communicated to and properly motivated. Supports and guides the F & B Team towards being a successful department. Assist in maintaining budgeted profit margins and standards in F & B Department. Oversee and ensure proper maintenance of the equipment assigned to the department. Oversee and ensure timely reporting of malfunction or maintenance deficiencies to appropriate addressee. Reduces waste material and supplies re-using and recycling. Maintains clean and orderly working surroundings. Assists in the development of marketing initiatives, menu planning to stimulate growth in sales for each outlet by implementing latest market development. Assists, participates and contributes to the monthly HACCP meetings as well as to the Health and Safety meetings. Take all reasonable measures not to handle food or food contact surfaces in any way that is likely to compromise the safety and suitability of the food Daily walk through and weekly inspection for sanitation / maintenance according to standards of all areas of responsibility, making notes of problem areas and reporting all findings along with the action plan for improvements to the F&B Manager. Continuous inspection of F&B Outlets in order to direct work, emphasis on sanitation and organization and reporting all findings along with action plan for improvement to the F&B Manager. Performs other functions as required by the management when required. Demonstrates understanding and awareness of all policies and procedures relating to Health, Hygiene and Fire safety. Train on emergency and evacuation procedures. Ensures all security incidents, accidents and near misses are always logged in a timely manner and brought to the attention of the appropriate addressee.
