A 5* luxury hotel in the Jakarta/ Bali area seeks a strong Food & Beverage Director who also possesses recent hands-on Culinary experiences. This person will be responsible for managing the busy kitchens, and the operations of all of the specialty restaurants, bars and lounges at this beautiful 500 room, high-volume, center property.  This position will report to the General Manager.

We are looking for an experienced Food & Beverage professional who is also a creative chef; someone who is equally comfortable being face to face with the guests, managing the kitchen and F&B operations, as well as controlling the financials (budgeting, costing, contract negotiations). The EAM F&B will be expected to be very involved in the daily F&B operations and to lead the FOH and BOH teams to exceed the culinary expectations of the discerning guests and the financial expectations of the Hotel Management.

Main Responsibilities:

Create a strong impression with the F&B offerings and continually grow the reputation of the hotel’s outlets.

Be responsible for all F&B services, controlling all costs, maintaining the ratios & budget and controlling labour in back of house as well as front of house.

Provide strong leadership, communication skills, customer orientation, initiative and teamwork.

Be responsible for the managing and training of the kitchen, restaurant and banquet staff.

Maintain the highest level of food quality and service standards.

Achieve guest satisfaction and organizational profitability through effective utilization of all resources.

Take ownership and responsibility of all aspects of your work and your team’s work.

Display a pleasant manner and positive attitude at all times and to promote a good company image to guests and colleagues.

Key Requirements:

Previous experience in 5* large volume and busy city center hotels.

Over 10 years of experience with a minimum 3 years’ experience in a similar role at a 5 star property.

Experience and knowledge in all aspects of kitchen and restaurant operations.

HACCP trained with Certification in food hygiene.

Salary:

Our client is offering a full international package, with salary net of taxes amounted to US$ 7500 net per month, accommodation, schooling, medical coverage, one flight home per year.
