Sous Chef - Job Responsibilities

Basiligo requires a chef who will create and execute current menu items and introduce new line of items. Required to manage kitchen team and daily operations.

Specific responsibilities include:

  • Producing daily requirements based on volume demand for Basiligo
  • Cleanliness and organization of main kitchens
  • Communication and ordering of all supplies and equipment to accounts
  • Proper rotation and monitoring of raw and finished products; managing expiry dates to Food Authority specifications
  • Maintain and manage chiller temperatures
  • Managing food production and rotation to ensure food cost and BEST goals are achieved
  • Assisting in menu development under guidance from owners
  • Training of all team members to ensure movement of the team
  • Completing monthly inventories
  • Create and facilitate all demand of items required for kiosk sales.
  • Prepare recipe cards for kitchen staff execution.
  • Develop dish execution procedures to maintain high quality control.
  • Creating new dishes and offerings for customers on a monthly basis.
  • Conduct dish costing and documenting costing process for each dish.
  • Ensuring a consistent production of high quality food and working with management in cost optimization.
  • Create kitchen staff work plan to execute dish preparation and execution till packaging.
  • With help of logistics staff, ensure meals prepared for daily distribution are prepared for delivery.

EDUCATION and/or EXPERIENCE

3 Years’ Experience in Restaurant or Culinary Education and a minimum of 1 year experience in Restaurant

LANGUAGE SKILLS

Must be able to write and speak clearly and effectively. Must be able to compose effective recipes

MATHEMATICAL SKILLS

Must be able to convert recipes into larger and smaller batches. Must thoroughly understand weights, measures and conversion of both

REASONING ABILITY

Must be able to exercise judgment and make decisions based on job knowledge and awareness of company goals

PHYSICAL DEMANDS

Requires heavy lifting of up to fifty pounds. Requires working entire shift standing up. Requires constant bending, stooping and reaching
