Excellent opportunity for a highly motivated and passionate Senior Sous Chef to join this venture in a beautiful island on the south Adriatic coast of Croatia.

We are seeking an enthusiastic, hard working individual, who must be passionate about food.

We have two establishments:

Mimi’s Bistro, our boutique hotels venue - is a modern bistro providing high quality meals ranging from breakfast to a selection of seasonal mains. The Bistro offers at midday a menu composed of finger foods, gourmet sandwiches and amazing seasonal salads, while in the evening it offers daily changing specials created to the highest standard of innovation and freshness based on available produce (which is sometimes limited). The proprietors aim to provide a fresh and imaginative menu with an emphasises on local and seasonal produce as much as possible.

Silk  - a pan Asian street food style venue in the heart of the old town  offering a range of quickly and freshly prepared meals – from curries, fish tartars, dim sums, yakitori and pad thai to pork belly and crispy duck salad.

Job Specification:

  • Menu planning and development
  • Managing the day to day operations of the kitchen
  • Lead the kitchen team to develop the business as a whole
  • Manage all kitchen hygiene and paperwork
  • Outstanding skills in costing and profit margins
  • liaise with senior management to develop the business
  • Maintain a high quality of food and standards
  • Responsible for the kitchen rota  for all sections

Candidate Specification:

  • must have at least 4 years experience in a similar role
  • excellent food knowledge and seasonal products
  • able to carve an 80+ kg fish in minutes
  • be flexible and able to work throughout the kitchen
  • be able to develop junior brigade members
  • have excellent communication skills
  • be a leader and inspiration to other team members
  • Drivers licence

Contract: renewable yearly for the following period

  • Starting on 15 March through October .

Salary: Will commensurate with experience
