Experience in fine dining restaurant on similar position required, Asian cuisine preferable

  • Lead by example and adopt a hands on style of management within the operation, always work on the floor during service periods.
  • Actively participate in all the meetings.
  • Maintain a close working relationship with the Head Chef, feedback all member comments (good and bad).
  • Check that tables are impeccable and that tables are set correctly at all times.
  • Make sure that stations have their correct mise – en – place at all times.
  • Ensure that all stocks and supplies are requested in a timely manner, correct stock levels maintained and stored under optimum conditions.
  • Ensure that operating equipment is used properly and not abused.
  • Ensure that the Restaurant and all Private Rooms are fully set up & clean and tidy at all times.
  • Ensure that the Standards of Performance (SOP) manual for your department is always up to date and that agreed procedures are followed at the times.
  • Get to know, develop and maintain excellent relations with our customers. Develop and maintain a comprehensive guest history to ensure you and your team anticipate their needs.
  • To maintain a high degree of interest in self-development, displaying this by making suggestions for realistic improvements.
  • Assist with training within your department.
  • Assist with daily training sessions to ensure that staff can perform their duties correctly.
  • Ensure structured induction procedures are in place and followed.

-     Ensure appropriate food and beverage testing & training is taking place on a regular basis, so that staffs are confident with their product knowledge and are able to describe and recommend to guests properly.


-     Ensure that Head Waiters are developed and trained up to Supervisor level, so that they are equipped to deputise in their absence.


-     Try to anticipate potential problems and follow company guidelines to avoid them.  Inevitably, guest’s complaints will arise, therefore, when they do please follow company complaint procedure.


-     To maintain high standards of morale and personal appearance of all staff.


-     To ensure fair and equitable discipline, yet complying with house or company regulations.
