Job Location

 

The Grand Millennium Hotel Muscat is the flagship of the Grand Millennium Brand. The Hotel is Sharia with seven (7) F&B outlets, spa and recreation and a total of 328 rooms and apartments. It is located next to the Muscat Grand Mall.

 

Key Job Responsibilities

 

    • Supervise, direct and participate where necessary in the preparation cooking of all food items.
    • Ensure that all purchasing is placed with the Executive Chef.
    • Receive stock, checking thoroughly for quantity and quality and to report to the Executive chef any subs-standard items.
    • Ensure an efficient system for storage of all food items required.
    • Check quality of food before being sent to customers.
    • Ensure that the quality of food is consistent.
    • Ensure that over/under preparation of production of food is kept to a minimum.
    • Ensure that all use by dates are checked to ensure they have not been exceeded, before using.
    • Report any food items that have exceeded their use by date to Executive Chef.
    • Ensure that portion control of all dishes is kept constant.
    • Conduct training with all Kitchen staffs predetermined by the Hotel and to appraise and recommend to the Executive Chef accordingly on the performance of all Kitchen brigade.
    • Generally promote and ensure good Inter-departmental relations.
    • Ensure the proper use of all equipment and training kitchen staff in accordance with specifications.
    • Report any failures/problems to the Maintenance Department.
    • Participate in any Training/Developments schemes as recommended by senior management.
    • Assist the Duty Manager in any tasks outlined/detailed by him/her.
    • Ensure that all departmental staffs have Food Handlers Certificate with HACCP Training Recorded.
    • Report injuries, disease and dangerous occurrences in line with company policy and procedures. Report  any training deficiencies or maintenance problems to Executive Sous Chef/ Executive Chef and follow up to resolve.
