Job Level
  • Must have at least 03 - 05 years of experience in authentic Japanese cuisine  and must have experience in modern fine dining Japanese cuisine  in 5 stars international  restaurant or  hotels for at least  the last 03 years.
  • Organize together with the Chef de Partie shifting in the section with regard to mise-en-place production and its service.
  • Take orders from his/her Chef de Partie and carry them out in the correct manner.
  • Together with his/her Chef de Partie write daily dry store, food requisitions and kitchen transfers on the appropriate forms for the approval of Japanese Chef de Cuisine in order to achieve the high stock rotation desired in his/her section.
  • Maintain good colleague relations and to motivate colleagues.
  • Ensure that training on a one to one basis has been carried out and comprehended.
  • Work to the specifications received from the Chef de Partie regarding portion size, quantity and quality as laid down in the recipe index.
  • Responsible for completing the daily checklist regarding mise-en-place and food storage.
  • Check the main information board regarding changes in any information regarding the organization.
  • Checks Commis on his / her section: e.g. Personal Hygiene.
