  • To be responsible for all glasses, wine and digestive equipment within the restaurant
  • To ensure that requisitions are completed accurately and promptly
  • To ensure that the restaurant is fully set up for beverage service before each service period
  • To ensure that all closing procedures are followed correctly
  • To ensure guest satisfaction by giving an efficient and courteous wine service
  • To offer aperitif before dinner and to take wine orders during service
  • To offer digestive after dinner
  • To use knowledge and skill to up-sell wines
  • To use knowledge and skill to assist guests by recommending suitable wine accompaniments for their dinner
  • To present, serve and replenish all beverages without spillage
  • To offer the liqueur trolley to all guests
  • To ensure that all equipment where possible is kept secure
  • To organise and facilitate training sessions for all restaurant staff
  • To be knowledgeable about all beverages, its style, type, origin, strengths and accompaniments
  • To comply with Company Health & Safety, and Fire Regulations and procedures.
  • To undertake any other reasonable task/request by Management
  • Generate new business opportunities
  • Comply with all hotel policies, procedures and Brand Standards
  • Attend training and development as needed.
