Our client is opening a new hotel in Riyadh, Saudi Arabia in 2017 and is searching for a highly experienced and trained Executive Sous Chef to oversee the activities of the entire kitchen division in support of the Executive Chef.

The ideal candidate will have a very strong working background within a multi-cultural environment and be responsible for budgets and cost control, recruitment and development of the kitchen team, HACCP, Health and Hygiene monitoring and maintenance as well as remain highly creative in designing eclectic menus. Candidate must have exceptional knowledge of preparing Pan Asian/European/Middle-Eastern dishes and must have a fine dining background as well.

MOST IMPORTANT: Candidate MUST have experience in using NITROGEN applied techniques to create food

Key Attributes:

  • Must have a strong background in being associated with leading international 5 star hotel or resort chains within Europe, Middle-East or Asia
  • Background in fine dining is a must
  • Provide supervision, training, direction and leadership to all kitchen staff
  • Ensure smooth operation in the kitchen areas
  • Ability to lead and train a team of more than 150
  • Monitor all the food preparation for buffet, casual and fine-dining as well as banquets and events
  • Should be in control of purchasing, receiving and storing
  • Ensure the highest level of food safety and security
  • Must have excellent communication skills in English
  • Have strong leadership and training skills
  • Should be HACCP certified
