Job Description



Serves as a senior member of the Management under the guidance of the Chef de Cuisine and in co-operation with the Director of Culinary and F&B Services. The Sous Chef takes full charge and responsibility of the all aspects of the kitchen operations, especially in the absence of the Chef de Cuisine. Supervises the functions of the kitchen employees, facilities and cost to ensure maximum food and beverage departmental profit is achieved.


  • Maintains on a day to day basis the standards and policies of the Hotel
  • Maintains a clean, tidy and orderly office space work area
  • Ensures staff have the necessary tools to complete their daily administrative tasks
  • Writes recipe cards and prepares dishes for food photography
  • Keeps up to date recipe files properly displayed and ensures daily production lists are up to date
  • Attends meetings and briefings as directed by F&B Management
  • Proactively updates direct superior on status of assignments an tasks
  • Ensures adequate supply of raw material by checking stock levels daily and preparing details for requisitions of supplies
  • Controls all sections of the mis-en-place for quality and quantity
  • Checks and tastes the food quality of food produced on a daily basis
  • Handles complaints directly and ensures smooth flow between service and kitchen
  • Ensures all preparation of food is according to hotel recipes and presentation standards
  • Fully conversant with local food hygiene and HACCP standards as per Dubai Municipality
  • Performs all duties common to all supervisors and the duties as may be assigned by the Chef de Cuisine
  • Ensures that all machines, furniture, equipment and utensils are clean adn in a safe condition to prevent accidents
