Successful candidates must have a minimum of 1-2 years experience in a similar position in a 5 stars hotel. Communicates fluently in English, Arabic knowledge is an advantage.



1.   Prepare the daily Mise- en- place list for the commis

2.   Monitor  the final Mise- en - place  for cooking / Preparation area


3.   Checks on daily event orders /Reservations/ BEO

4.   Check the work area, utensils and tools to ensure that these are clean at the beginning of each shift

5.   Check and records for Temperature of storage area i.e. chiller/ freezers filled by Commis

6.   check the production dates/ labels for items done by commis

7.   Checks on the quality of all food items/ingredients before preparation

8.  Check the par stocks of food items in chillers/ freezer and make record


9.   Cook food as per the menu, instruction from Chef In charge, as per the standard Recipe

10.   Monitor the Refilling of food at buffet / events/ function

11.   Check the stored  cooked food in chillers/ blast chiller/hot cabinets/ buffet

12.   Cooking of  special guest requests up to maximum flexibility and creativity

Cleaning/ Clearance

13.   Monitor kitchen refrigerators and/or food storage areas, as instructed by the chef in charge

14.   Monitor the cleaning schedule of his area HACCP

15.   Fill up the Temperature records for chillers / Cold rooms

16.   Fill up the cooking logs i.e. cooling/ reheating / thawing records

17.   Fill up the Checklist for  hygiene and personal appearance, of commis

Closing/ follow up

18.   Report timely  malfunction or maintenance, deficiencies to supervisor in his work area
