superior upscale Crowne Plaza, the lavish long-stay InterContinental Residence
Suites and the 18 hole championship Al Badia Golf Club.  In addition to
over 1000 bedrooms, the four properties boast a selection of high quality
restaurants and bars, an impressive 3,800 square meter Event Centre across two
levels, the luxurious Spa InterContinental, state-of -the-art gymnasium
facilities, and swimming pool facilities. 



  
At the moment we are
looking for a Sous Chef, Japanese Cuisine Speciality to join
our energetic, enthusiastic and passionate team at InterContinental
Hotel Dubai Festival City.



 
As a Sous Chef,
Japanese Cuisine Speciality
, you will be under the instruction, direction
of the Executive Chef and Executive Sous Chef, within the limits of the hotel
policies and procedures; you will manage, control and supervise the team
members assigned in your shift. You will be responsible for the proper
efficiency and profitable functioning of the kitchen section which has been
assigned to you.



 
You will establish
quality standards for all menu items and for food production practices. 
You will make suggestions to Executive Chef for improvements, with the target
to have more satisfied customers and/ or increase volume of business or
profit.  You must possess knowledge of Japanese Cuisine in regards to ingredients, method of cooking and
presentation.  You will be responsible for constantly maintaining a high
standard of food preparation by checking it for taste, temperature and visual
appeal.  You will manage the team to ensure compliance to food &
safety, hygiene standards are followed.  You will maintain the up keep of
your kitchen section, and ensure all your team members are well trained, has
been assigned their specific duties and you will establish and promote a good
team work within the kitchen, service, stewarding and F&B supporting
departments.  You will be responsible to check maintenance of all kitchen
equipment’s located in your section and make any attempt to prevent the damage
or loss of the hotel property.



 

The right candidates
should be adequate on the following;



 
  • Participate in the planning and costing of
    menus
  • Develop and write standard recipes
  • Develop new dishes and products
  • Ensure that outstanding culinary technical
    skills are maintained
  • Assist with organizing special events and
    special food promotions
  • Maintain comprehensive product knowledge
    including ingredients, equipment, suppliers, markets, and current trends and
    make recommendations for appropriate adjustments to kitchen operations
    accordingly
  • Maintain a hygienic kitchen
  • Clean the kitchen and equipment
  • Knowledge of Japanese Cuisine (ie. Sushi, Tepanyaki,
    Robatayaki, Tempura, Izakaya, etc.)
 
 
Preferred candidate will
have a degree or certificate in culinary arts and two years of working
experience in same role and same cuisine, with at least one year in a
managerial capacity in 4 or 5 star hotels, or equivalent combination of
education and culinary/kitchen operations experience.  Has good command of
English language, highly responsible & reliable, ability to work
cohesively with fellow colleagues as part of a team, ability to work well under
pressure in a fast paced environment, ability to focus attention on guest
needs, remaining calm and courteous at all times
