Scope Of Work:
Under the general guidance of the Outlet Manager/Restaurant Manager, the Captain is responsible for providing supervision to all Waiters / Waitresses, as well as ensuring that efficient and courteous service of food & beverage is provided to all guests in the outlet.

Job Responsibilities:
1.  Assists the Outlet/Restaurant Manager/Head Waiter with the day-to-day operation of the outlet in accordance with established policies and procedures, acting on their behalf in their absence.
2.  Interacts with guests in each of the outlets to solicit comments.
3.  Communicates with the Outlet/Restaurant Manager/Head Waiter any difficulties, guest comments and other relevant information.
4.  To demonstrate the 12-SEB’s and ensure that all Outlet/Restaurant  colleagues continually follows the same.
5.  Prepares daily assignments of personnel based on the volume of business.
6.  Prepares and implements the outlets promotions / theme nights.
7.  To monitor and ensure that the daily revenue is deposited with the front office cashier and summarized properly according to the guidelines set by the Accounts Department.
8.  To ensure that the P.O.S machine is in full implementation.
9.  Keeps updated with new products in the market.

HR Responsibilities:
10.  Assists the Outlet/Restaurant Manager to establish comprehensive training programmes for the Outlet.
11.  Evaluates departmental training sessions.
12.  Personally conducts training for all outlet colleagues as required.
13.  Attends all hotel trainings as required.
14.  Adheres to all HR and hotel policies and procedures.
15.  Continually strives to improve self; knowledge and skills.

Financial Responsibilities:
16.  Prepares requisitions as requested,  ensuring that par stocks are maintained; to make sure adequate stock of food & beverage items in storeroom is maintained. Initiates necessary requisitions and approved transfer forms between outlets are documented properly.
17.  Ensure that proper billing procedures are followed in the Outlet/Restaurant.
18.  To assist Outlet/Restaurant Manager with the implementation of control measures to cut down SOE breakage to reduce costs.
19.  Actively participates in energy saving and recycling initiatives, and ensures all F&B colleagues follow the same.

General Responsibilities:
20.  Attends all required management meetings.
21.  Assists the Outlet/Restaurant Manager to ensure that the appropriate standards of conduct, dress, hygiene, uniform and appearance are maintained for all colleagues within the F&B Department.
22.  Strictly follows the hotel FSMS Program, including the cleanliness of all restaurants and bars, personal hygiene standards for all food handlers and monthly Hygiene Audits. (Please refer to HACCP Hygiene and Sanitation.)
23.  Strictly adheres to the hotel’s Policy on Confidentiality and Ethics.
24.  Actively participates in all EHSMS requirements.
25.  To carry out any additional tasks and projects as requested by the Outlet/Restaurant Manager.
