A position has arisen for Chef De Cuisine for The Address Montgomerie Dubai. In this role, you will be responsible for assisting the Executive Chef to set and maintain standards, ensuring the smooth operation of the kitchen, providing training and development to kitchen colleagues and leading by example. Candidate with International 5 star hotel experience,Creative, outgoing and strong leader (organizational skills) with 2 to 3 years in similar role would be preferred.
Direct and organize the activities of the Kitchen Team to maintain the highest standards of food quality Regulate the cost and quality of all raw ingredients within the division
Oversee recipe preparation, ensuring that each dish retains the exact same appearance and technique
Enforce compliance with legal safety and hygiene regulations for at all stages of food preparation
Ensure Chopping Cooks have a basic awareness of kitchen hygiene and possess an Official Hygiene Course certificate; conduct daily briefings to reinforce basic rules of food handling hygiene
Provide guidance and oversight in the maintenance of Chopping Cooks’ personal tools and sharpening regimen
Carry out daily inspection of the cold store air conditioning temperature, ensuring raw ingredients are stored within food safety temperature regulations Draw up a weekly timetable detailing cleaning of the cold store and surrounding area in order to avoid bacterial contamination of high-risk foods
Confirm that all equipment is in normal operating order on a daily basis; should any equipment be out of order, immediately notify the maintenance department so as to prevent any disturbance to normal working routines

Thorough knowledge of restaurant operations including food, beverage, service techniques, and guest interaction Qualification & Experience A F&B specialist with a proven track record in Food and Beverage within their respected industry. At least 5 years experience working in F&B including management level experience
Degree or Diploma in Catering or Hotel and Tourism Management
