Food & Beverage
POSITION SUMMARY: To ensure the smooth and effective running of day to day Goods Receiving and stores operation. To assist Food & Beverage department to achieve budgeted Food & Beverage Costs. Manage all aspects of Material Control and Micros point of Sale function within hotel and provide assistance when required.
Preparation of Flash Cost reports.
Verification of daily receiving report.
Verify the items void control report & Open items summary
Verify the Guest amenities & other cost credits.
Transfer the Consumption & daily receiving Journals from ADACO to SAP system.
Preparation of FOC receivable values against the purchases & coordinate with stores & suppliers to recover the FOC receivables.
Conduct the Inventory spot checks in the stores & outlets
Maintain the Micros database while updating the new items & modifying when necessary.
Maintain the ADACO Inventory database while updating the new items & modifying when necessary.
Monthly inventory verification for Food, Beverage, Tobacco. General & Engineering Stores.
Preparation of management information reports and monitoring of expenditure variances.
Preparation of monthly Cost Controller’s Report with Outlet wise P&L reports.
Preparation of Food, Beverage & tobacco Monthly Reconciliation’s.
Preparation of Menu Engineering.
Prepare price variance report & submit to DOF any variations.
Conduct the Market surveys on regular basis
Update the menu costing & suggesting selling prices according to the outlet standard.
Conduct the Yield test & Blind test according to the clarification.
Conduct the Mystery Guest Check.
Control the open bars according to the event order.
Make spot check of the goods received in the Hotel as well as the ones in the store during the month. Make sure all goods received and in the store are in the quality and quantity requested, with a valid expiration date and supported with the legal requirements (legal invoice, stamp etc)
Introduce and monitor par stock levels in all Beverage outlets (excluding Banquets) in line with Starwood policy and procedures.
Provide F & B Manager with suggestions for future price structuring of menus, utilizing knowledge of current trends and unit prices.
Attend monthly Food & Beverage meetings, monthly General Manager Team Briefings, and other business related things.
• Ensure compliance with all health, safety and hygiene legislation.
• Conduct six monthly appraisals for Good receiving and storeroom staff providing guidance with all Cost Control related duties.
• In conjunction with Training Manager, provide training for all Material Control and Macros Point of Sale users.
Should have experience in cost control and cost control Systems Adaco or Brichstreet
