About the Role

An exciting opportunity has arisen for a talented Junior Sous Chef to join the Khaymat Al Bahar restaurant team at the Madinat Jumeirah Resort. The main purpose of this role is to Assist the Sous Chef/Chef de Cuisine to set standards and maintain them, and to ensure the smooth operation of the department by optimising the use of materials and manpower, thereby maximising revenue and guest satisfaction.

Your key responsibilities would include:

  • Assist the Chef de Cuisine/Sous chef in the supervision of all colleagues engaged in the kitchen.
  • Attend daily meetings with Executive Chef/Executive Sous Chef.
  • Assist the Chef de Cuisine/Sous Chef in planning menus and recipes and test samples in conjunction with the Executive Chef/Executive Sous Chef.
  • Write specific and accurate product specifications and standard recipes for use in the computer and by the material manager.
  • In conjunction with the Chef de Cuisine/Sous Chef, establish job methods and supervise on a regular basis and correct if necessary, cooking standards to maintain high quality of food and service.
  • Plan rosters on a 1 weekly basis and review overtime, rosters and holiday requirements on a daily basis with the Chef de Cuisine/Sous Chef.
  • Liaise with the Chief Steward in order to ensure high standards of cleanliness are maintained in all areas of kitchen.
  • Coordinate and execute training of the kitchen colleagues, be able to motivate the team and cook food on a daily basis according to business requirements.
  • About You

    In order to be considered for this role, you will have an internationally recognised Culinary qualification and you should have experience gained at the level of Junior Sous Chef in a Lebanese cuisine restaurant.

    You will be a highly driven and motivated individual who has a passion for Lebanese cuisine.  With a good working knowledge of HACCP you will be comfortable leading from the front and mentoring your colleagues in order to ensure that the highest standards of health and safety, quality assurance and hygiene wise are adhered to at all times.

    With a good command of the English language, verbal and written, you will also have a working knowledge of Microsoft packages including Word and Excel.
