Specific Pre - Opening Responsibilities 

  • Understand and follow
    designs, set up’s as planned and approved
  • Bring creativity and flair
    to the required implementation of plans as required
  • Supervise the construction,
    design and setting up phases
  • Conduct snagging process
    and approve facilities after de-snagging alongside General Manager, Resort
    Manager and other relevant senior leaders
  • Act as an advisor to the
    first time implementation of plans as required
  • Suggest any new ideas
    important for the successful opening of relevant facilities
  • Understand or design
    available or required Standard Operating Procedures for ways of working in own
  • Devise/ approve/ implement
    operational manuals, brand service standards and job descriptions for each
    section of the division
  • Recruit key members of own
    team as per IHG People tools in collaboration with Director of Human Resources
  • Oversee recruitment,
    induction and training of entire team alongside own key team members and Human
  • Plan and oversee all
    logistics in own department for a smooth and successful opening
  • Ensure that the facilities
    are well set up, logistics are available and the right quality of human
    resources are recruited, trained and made enthusiastically ready for the
    opening as per deadlines from Owning company, IHG and General Manager.


  • Prepare and manage a business
    plan/ budget with measurable targets for department within the financial
    parameters set down by the hotel budget
  • Effectively monitor and analyze
    variations from the budget
  • Develop systems that
    measure the cost effectiveness of the department
  • Develop procedures that
    track, report on, and control the running costs of the department
  • Contribute to the overall
    strategic plan of the business and help compile the annual hotel business plan
  • Keep abreast of trends in
    your area and implement best practice initiatives


  • Develop a competitive
    business/ operations and marketing plan for your operational area and
    communicate this to your team
  • Work within the company’s
    Human Resource Management System to ensure the departmental performance of
    staff is productive
  • Plan for staffing needs
  • Recruit in line with
    company guidelines
  • Prepare detailed
    orientation programmes for new colleagues
  • Maintain a comprehensive,
    current and guest focused set of departmental standards and procedures and
    oversee their implementation
  • Ensure training needs
    analysis of your departmental staff is carried out and training programmes are
    designed and implemented to meet needs
  • Deliver training
  • Actively work at developing
    your direct reports and identify high potentials 
  • Maintain training records
    for all direct reports and ensure they do the same for their direct reports
  • Conduct probation and
    formal performance appraisal in line with company guidelines
  • Coach, counsel and
    discipline staff, providing constructive feedback to enhance performance
  • Approve leave requests
    after considering peaks and troughs in the business 
  • Regularly communicate with colleagues
    to maintain positive relationships

    areas of improvement and ensures appropriate corrective action is taken.
  • Share plans to take
    corrective action based on comment cards and guest satisfaction results with
    property leadership.
  • Empower colleagues to provide
    excellent guest service.


  • Familiarize self with
    Company Health and Safety Policies and ensure your areas promote and comply
    with them
  • Take responsibility to
    rectify hazardous situations, reporting major areas of concern to your General
    Manager or designate
  • Familiarizes yourself with
    property safety, first aid and fire and emergency procedures and actively
    enforce these in your area of responsibility
  • Ensure security incidents
    in your operational area are reviewed and corrective measures implemented to
    prevent recurring incidents
  • Develop quality management
    systems. With Purchasing Manager, develop and monitor the implementation of
    purchasing procedures

This is the top food and beverage job in a
full-service resort. Supervises a large number of team members in food and
beverage outlets, kitchens, banquet facilities that cater to 500 people or
less. Provide a professional, advisory and executive support service to the
General Manager to assist in meeting strategic goals.

  • Bachelor’s degree / higher
    education qualification / equivalent in Hotel Management, Culinary Arts, or any
    other related field
  • Minimum five years’
    experience as a Food & Beverage Leader in a five star hotel. Experience in
    a resort is desirable.
  • Pre- opening experience in
    hotels or outlets is a must for this role.
