Job Title: Reception Manager

Position Type: Full Time

Reporting To: Head Chef

Objectives

  • To assist the Head Chef in the day to day running of the kitchen; provide an efficient and cost effective food service;
  • ​​To treat our guests like Superstars!

Duties

  • To perform  the duties of the Head Chef while on shift when required , taking sole responsibility for the kitchen and dealing with any issues that may arise during service;
  • To ensure that all chefs de parties are familiar with the day's requirements and ensure correct mise en place;
  • To liaise with the Head Chef and management daily regarding special requirements, VIP's functions, etc;
  • To ensure that each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature.
  • To assist the Head Chef in ensuring that all staff is constantly trained to respect and deliver good portion control and perfect presentation of all dishes;
  • To ensure that sufficient stocks of al raw and dry goods are being purchased , kept and stored under the correct conditions;
  • To ensure that all statutory hygiene requirements are diligently followed;
  • To ensure that updated files & documents records are kept : recipes, techniques, temperature control sheets, pest control records, etc,..
  • To ensure that attendance registers are kept daily and that any absenteeism is reported to management without delay;
  • To ensure that all documents such as delivery notes, invoices are passed to management immediately for processing;
  • To be continually aware of, and maintain, the highest standards of personal hygiene and ensure that any subordinate staff adhere to this as well;
  • To maintain a high degree of interest in self-development;
  • To assist with regular stock takes as and when required;
  • Always have accurate recipes and costing in order to ensure an accurate COG for the restaurant;
  • To ensure that maintenance problems are promptly reported;
  • Attend all local training courses as per municipality requirements (HACCAP, Food & hygiene,  etc.,..);
  • To take part in any fire or evacuation drills and ensure complete familiarization with all exits, including those normally used by customers, as well as fire escapes;
  • Carry out any other reasonable request asked by the management ​
