THE ROLE


 


As Executive Pastry Chef, you will be under
the direct supervision of the Executive Chef, is responsible for planning,
organizing and directing the overall operation of the Pastry. Supervises
mis-en-place and preparation of all food requirements of Pastry.  Ensures that pastry and bakery
are consistently producing high quality food items according to current menus
and set standards. Maintains
profitable food production level according to forecast.  Coordinates
closely with the Executive Chef on new methods of food presentation and recipes.  Prepares
daily market list indicating type of food items, quality and quantity.  Initiates
requisitions of food stuff and kitchen supplies based on estimated food
consumption.  Assists
in preparing the department’s annual budget.  Ensures
that all operating equipment is functioning.  Exercises
administrative supervision on all pastry staff, which includes personnel
requisition, disciplining, promoting, training and approving of leaves and
overtime requests.  Attends
to special events, meetings and other activities in the absence of the
Executive Chef.  Monitors
inter-kitchen transactions for proper cost accounting.  Evaluates
kitchen requisitions and inter-kitchen transfer of stocks.  Conducts
physical inventory of stocks in the preparation areas.  Performs
other related duties and special projects as maybe assigned by the Executive
Chef from time to time.  Discusses
and recommends with the Executive Chef menu price adjustments when
necessary.  Determines prices of unlisted
food items in conjunction with Executive Chef and Director of F&B.  Prevents
the use of spoiled or contained products in any place of food preparation and
prevent employees who are ill or suffering from an infection from taking part
in the preparation or handling food. 
(Keeps constant watch on food prepared in all kitchen, check receiving).  Conducts
daily briefing and de-briefing in the absence of the Department Head.  Proposes
an effective duty to ensure sufficiency of manpower in accordance to volume of
business.  Communicates
effectively with guests, subordinates, immediate supervisors and other section
heads.  Administers
personnel action on leaves & overtime requests, disciplinary actions and
commendation.  Identifies
and solves problems in a professional manner.  Recognizes
good quality products and presentation.  Acknowledges
and screens daily work schedule.  Ensures
his presence during peak business hours and makes rounds to all production
areas.  



Qualifications and Technical skills:
  •  Minimum
    2 to 3 Years in the same capacity with reputable 5 star chain.
  • Experience
    is a must in managing high volume outside catering with a reputable 5 Star
    chains and pastry specialists such as Fauchon Paris, Le Notre…etc.
  • Fluency
    in English
  • Prefer
    candidates with strong ability to balance work-life and social life
  • Establishes
    strong working relationships to deliver positive results
