Job Title: Chef de Partie

Position Type: Full Time

Reporting To:  Sous Chef / Head Chef

Objectives

  • To take full responsibility for the running of a particular section of the kitchen, ensuring and efficient and cost effective food service;
  • To treat our guests like Superstars!

Duties

  • To ensure  the stock allocated to the section is kept under optimum conditions;
  • To ensure that all mise-en-place is always freshly prepared and on time;
  • To ensure kitchen wastage is kept to a minimum;
  • To ensure that all dishes are being prepared to the correct recipe and to the correct quantity;
  • To ensure that all dishes reach the hot plate or passe correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner;
  • To ensure that the assigned section is being kept clean and tidy at all times;
  • To ensure that junior cooks and trainees receive the right training and optimum guidance;
  • To monitor stock movement and be responsible for ordering of the designated section;
  • To ensure that any anticipated shortages are communicated promptly to the sous chef or head chef;
  • To deputize in the sous chef's absence and take charge of the kitchen when directed to do so;
  • To attend training courses and meetings as and when required;
  • To always diligently follow statutory hygiene requirements as per laid down procedure;
  • To be continually aware of, and maintain, the highest standards of personal hygiene ;
  • To take part in any fire or evacuation drills and ensure complete familiarization with all exits, including those normally used by customers, as well as fire escapes;
  • To report any suspicious packages or parcels to management without delay;
  • Carry out any other reasonable request asked by the management
