Job Description

Take advantage of this opportunity to be a part of Aman.  We are looking for an ambitious and enthusiastic Head Chef – Japanese Cuisine to be based at Aman Le Melezin, France.  An intimate Alpine lodge at the heart of Courchevel 1850, Aman Le Mélézin combines world-class skiing in Les Trois Vallées with the charms of a French château.

Join our family at Aman, serving the needs of our guests by leading a small team of kitchen operations staff at our resort during this season from December to April.  Exciting future opportunities await to be explored when the season ends.

You will be involved in menu development, preparation and presentation of Japanese cuisines focusing on Noodle and Ramen ensuring maximum quality at all times.  You will be highly visible at the front of house, greet and meet guests, tailor-make menus and build guest relations to contribute to their memorable stay.  You will coordinate the daily activities of the resort’s kitchen and coaching a small team.  You will manage food cost controls to contribute to the F&B revenue.  Naturally, you will maintain the highest standards of Food Hygiene, and adherence with all Health and Safety standards.

Desired Skills and Experience

For this role, we welcome Japanese applicants who are holding valid work visa in France.  Fluency in business English or French is considered mandatory.  Other language capabilities are desirable, but not essential.

You will likely already possess 3 - 5 years of Hotel Industry experience in Japanese cuisines and at least 3 years in a comparable role as Head Chef for a luxury resort.  You are passionate to coach and develop team members while planning and organizing the kitchen operations for the resort.

You are able to demonstrate creativity in menu development and dining experiences with the natural, wellness and serene environment in mind coupling with the various occasions and events that our guests will enjoy during their stay.
