Gili Lankanfushi requires a strong Chef de Partie who will be responsible for the creation of high quality dishes at the resorts Over Water Grill.
POSITION: Chef de Partie-Over Water Grill
SCOPE OF POSITION
As Chef de Partie you are to demonstrate and help maintain high levels of service that consistently exceed the expectations of our clients.
QUALIFICATIONS AND EXPERIENCE
• Formal Degree in Food Management from a recognized International culinary institution
• Previous experience in a Demi or Chef De Partie role, preferably within a formal or fine dining environment
• Knowledge of basic food preparation, presentation and preservation
• Experience in quality establishments and a good knowledge of English are essential.
DUTIES AND RESPONSIBILITIES
• To work with the Sous Chef to ensure mis en place is completed
• Ensure that dishes are prepared and cooked according to the specific restaurant standards
• Ensure that stock is rotated and controlled within the specific section of the kitchen
• Maintain a detailed knowledge of the full menu and be able to explain dishes as per their descriptions.
