- controlling all hot and cold storage areas belonging to his operation in all galleys.
- controlling of working hours for Chinese Galley staff.
- checking on Quality and portion control for Crew Officers and staff.
- assisting the Executive Chef in the administrative and clerical aspect of his duties.
