Due to open 3rd Quarter 2012 and with an unparalleled address at the heart of the spectacular Abu Dhabi Corniche, The St. Regis Abu Dhabi will provide easy access to everything that this incredible city has to offer. In the heart of the business and cultural districts the hotel is a short distance from the magnificent Abu Dhabi Mosque, the city's many shopping malls, golf courses, museums and major attractions, including the incredible Formula One Grand Prix circuit and Ferrari World on Yas Island. The hotel comprises 283 fabulously appointed guest rooms including 55 suites, most of which have incredible views of both the Arabian Gulf and the city of Abu Dhabi, the one of a kind Bridge suite between the two Nation Towers is quite simply breathtaking. Each room and suite will be serviced by the celebrated St Regis Butlers who will provide ever-present yet unobtrusive attention to detail, while attending to each request with discreet precision.

Among the hotels vast array of amenities will be eight outstanding food and beverage venues including the hotels signature restaurant, - a partnership with celebrated British Chef, Gary Rhodes. Department

The Pastry team is part of the Food and Beverage Culinary team and the succesful candidate will report directly to the Executive Chef of the Hotel.



Job Description

Effectively monitor the daily operations of the respective outlet, including provide support and guidance to fellow outlet Chef de Cuisine and Sous Chef to ensure success and effective operation ending in a positive guest experience.
To produce the majority of pastry items for the hotel, including the dessert displays, show-pieces, chocolates, petit-fours and specified bread items to a high quality standard of ingredients and appearance.
Work in conjunction with Gary Rhodes team in terms of recipes execution and ensure outstanding commitment to deliver require product quality.

Main Responsibilities
Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation
Responsible for the direction and control of the Pastry department, for the work of the staff in that section and to work in unison with the other sections of the brigade.
Full awareness of all menu items, their recipes, methods of production and presentation standards
Assess quality control and adhere to service standards
Support the control of food cost.
Ability to produce own work in accordance with a deadline and to assist and encourage others in achieving this aim
Seek own solutions to obstacles that occur from time to time
To project a pleasant and positive professional image to all contacts at all times
Review all written communication, ie, resumes, daily/weekly, reservation, rooming list, BEOs, to determine appropriate staffing levels.
Communicate with restaurant manager for smooth running of front and back of the house.
Responsible for maintaining a strong client relationship and ensuring that all outlets are communicated to and execute by all hotel operation departments making for a successful meeting experience for the meeting planner and attendees.
Responsible for the development and maintenance of all policies, procedures and quality standard within the department, utilizing a continuous improvement approach to ensure a high quality, cost effective and customer focused operation.
Maintain a high level of service by constantly training and coaching all direct reports and talent.
Inspect and overseas the cleanliness and maintenance of all function space, public areas, and service areas.
Coordinate with restaurant manager, executive chief steward, housekeeping and engineering to ensure the highest level of product delivery.
Responsible for monthly schedule and payroll for the outlet.
Responsible for stock rotation, direct purchase and control of expiry food product on the shelving.
Knowledge of all food & beverage procedures standards, quality presentation, service and products and local health & sanitation standards.



Requirements

Significant track record in this area, ideally 10 years plus experience and must have held minimum of 2 previous Exec/Head Pastry roles.
Ideally educated to degree level and will be able to showcase pastry creation and innovation.
